Kalsec global market research experts are predicting five trends that we expect to guide the global food industry in 2022. It is important and interesting to note that many of these trends are complementary. For example, reductionism can also lead to an increase in interest for homemade hot and spicy foods and healthy hybrids like plant-based proteins. In addition to our predictions, we collected and summarized a master list of food trend predictions from top industry sources for you to view and compare. So what is in store for 2022? Here are Kalsec’s top five food trend predictions for 2022:

Reductionism

Reductionism is the first on our list for a reason. The focus on sustainability continues to increase as more people and companies recognize the urgency and need for better practices, and evolve those practices. Now more than ever, sustainability should be at the forefront of new product development and business operations. In 2022, we expect to see the ‘Reduce’ in ‘Reduce, Reuse, Recycle’ on display more, as consumers look to reduce their consumption (specifically of meat, dairy and eggs), and for brands that are actively reducing as well. This also includes the trend for a reduction in the amount of food waste produced, which can be better achieved using natural food protection. We can also expect new menu items in the form of scraps from other items as a form of upcycling and reducing waste. As a Certified B Corporation, Kalsec is recognized for its sustainable practices and we encourage others to also prioritize sustainability initiatives.

Asian Cuisine Gets Specific

The pandemic has limited physical travel, yet accessibility of global culinary influence continues. It has never been so easy to interact with professional chefs from around the world, and apply those learnings at home. Beyond traditional methods, more chefs are sharing their recipes and techniques on YouTube and other social media platforms, and encouraging their followers to learn from them. This will lead to an increase in recognition of more regionally specific global flavors. More consumers are trying new flavors and techniques combined with their favorite comfort foods, or are exploring new comfort foods in general as they learn about different regions that were not previously accessible to them. As a result, consumers are becoming more sophisticated and want to differentiate specific regions where cuisines come from, with specific destinations in mind. Less consumers are referring to food as simply ‘Chinese’ or ‘Asian’ and are calling out the specific regions, like Thai. Homemade Hot and Spicy

The opportunity and increased interest in gardening and cooking has led to the inclusion of more adventurous peppers and spicy foods in everyday meals and dishes. We expect this to lead to more homemade salsas, hot sauces, and the like with specific peppers beyond just jalapeño – like gochujang or serrano. More hot and spicy dishes will also callout homemade cooking techniques as well, with roasted, toasted, grilled, charred and bbq flavors adding a new dimension to spicy flavor profiles. Holistic Hop Beverages

We are seeing a more holistic approach to many categories across the food and beverage industry; which includes food and beverages that promote mind and body wellness and the addition of more functional ingredients like turmeric. Functional foods are here to stay, and continue to evolve with novel offerings and products. Within this larger trend for functional foods and beverages we expect to see more of a focus on holistic hop beverages and zero-proof offerings. The expansive flavor portfolio and benefits of hop beverages are more accessible than ever, as hops breaks through the traditional beer application.

The most popular hybrid that we expect to see is the continued trend for more mainstream plant-based options. We will see this proliferate globally in more options for plant-based chicken, seafood, milk, bacon, and more. The plant-based movement has largely been fueled by flexitarians, and we can expect this to continue to expand in comfort foods like fried chicken.
